Truffle Scrambled Eggs
Slow-cooked butter eggs, the simplest and best way to taste a fresh truffle.

Method
- 1Whisk eggs lightly in a bowl, season with salt.
- 2Cook in a non-stick pan over the lowest heat, stirring constantly with a spatula.
- 3Fold in cold butter cubes gradually as the eggs thicken to keep them glossy and soft.
- 4Remove from heat while still slightly loose — residual heat will finish the cooking.
- 5Serve immediately, shaving fresh truffle generously over the top.

- 30g cold butter, cubed
- Flaky sea salt
- 10g Fera Tartufi Black Summer Truffle, shaved
